“Bingtang elbow
Main ingredients: 1 pork knuckle (about 400 grams), 8 rapeseeds
Seasoning: cooking wine 15ml, salt 5g, rock sugar 20g, shallot 3 knots, dark soy sauce 10ml (or soy sauce 20ml), ginger 2 pieces, oil 20ml
Water volume: 800ml (4 cups, including cooking wine, dark soy sauce and other liquid ingredients)
How to do it:
1. Processing main material:
a) Put the pork knuckles in a pot of clear water, boil them on high heat, remove the blood foam, trim them neatly with a knife, and scrape off the remaining hair;
