Wash the fish and set aside.
Chop the onion, ginger, aniseed, garlic and set aside.
Add soy sauce, cooking wine, sugar, vinegar, and salt to the prepared seasoning.
Dip the fish in dry flour.
Put hot oil into the fish dipped in dry flour and fry.
Put the fried fish into the prepared sauce and add water to simmer for half an hour before it comes out of the pan.
